Banana crepes

This is a delicious recipe that a friend recently shared!
Stir up 2 eggs.
Mash up one very ripe banana.
Mix banana and egg together.
Heat small pan with 1-2 T coconut oil.
Then add 1/2 the mixture. Stir up for the first 30 seconds, and then let it set.
I usually pull up the edges a little and let the uncooked part flow under.
Like you would with an omelet.
It makes thin crepes. I turn it over and cook for another minute.
Here is the finished crepe covered with blackberry syrup.
They are great plain or with a little agave too.
